Baked banana, blueberry and raison porridge

As I’m sure I have mentioned; my favourite meal of the day is breakfast, and one of my favourite breakfast choices has to be porridge. I love how hearty and warming it is and that there are so many tasty ways of serving it.

This particular scrumptious bowl bursting with flavour is taken from Deliciously Ella. I love her recipes as they are all made from raw, good-for-you ingredients and taste amazing. This porridge is full of nutrition and sweetness in equal measures, with a slightly crunchy edge. What better way to start the day?

The only issue I take with this porridge is that I can never get enough!

Serves: 2 people

Ingredients

  • 1 cup of gluten free oats – for your fibre fix. I don’t necessarily always use gluten free oats

  • 1 cup of blueberries – superfood full of antioxidants

  • 1 and a 1/2 ripe bananas – great source of potassium

  • 1/2 a cup of raisins – to add sweetness without the refined sugar

  • 1/4 a cup of almond milk – low in fat but high in protein and fibre

  • A handful of walnuts – another superfood rich in omega-3

  • 2 tablespoons of cinnamon – for that hint of sweet spice

  • 1 tablespoon of pure maple syrup (optional) – I don’t use this. Instead, if I need to, I drizzle a little bit Agave Nectar onto the porridge once baked

Method

Start by pre-heating the oven to 190C.

Put the oats into a bowl and cover with boiling water and leave to soak for ten minutes. Meanwhile, you can get on with chopping the banana into slices and crushing the walnuts into small bits.

Once all the water has been absorbed into the oats, stir in the banana, blueberries, raising, almond milk, walnuts, cinnamon and maple syrup (optional).

Pour all these ingredients into your baking dish and bake for 20 minutes; at which point you should see that the top is slightly brown.

I, of course had to have two boils of this yummy goodness. Enjoy!
