Cheeky Choc Chip Cookie

Taken from BBC Good Food; this is a light little chocolate treat to satisfy your sweet tooth. These chocolate chip cookies are not only completely scrummy, they’re also not too bad for you and easy to make.

Ingredients
85g butter
1 tbsp cocoa powder
1 tsp instant coffee granules
85g light muscovado sugar
25g golden granulated sugar
85g dark chocolate - I used dark and milk chocolate; basically whatever I could find in our cupboard; some chocolate chips and some chocolate pieces
1 medium egg, beaten
½ tsp vanilla extract
140g plain flour
½ tsp bicarbonate of soda
Method
In a medium sized saucepan, gently heat the butter, cocoa powder and coffee until the butter has melted. Keep stirring the mixture to avoid any congealing. Then remove from the heat and stir in the sugars (both). Leave to cool.


In the meantime, use baking paper to line two baking trays and heat oven to 180C/160C fan/gas 4.
Either chop your chocolate into pieces, or if you are using chocolate chips, leave as they are. Mix the beaten egg and vanilla into the butter mix to make a smooth batter. Stir the flour and bicarbonate of soda together and tip this mixture into the batter mixture along with two-thirds of your chocolate pieces; the rest will be used for the top of the cookies. Stir to combine all ingredients together. Leave your mixture to cool and firm for 10-15 minutes.

This is the messy part! Using your hands, shape the mixture into little balls and lay them on the lined baking trays. Remember that the cookies will spread and won’t rise so make sure you leave plenty of space between each one. Press the rest of your chocolate pieces onto the top of the cookies.

Pop in the oven for 10 – 12 minutes; depending on how soft or hard you look them. I baked mine for 12 minutes but I prefer a soft cookie so would go for 10 mins next time.
