Guilt-free banana muffins

I absolutely love muffins; I can’t resist the sweet, moist goodness that every bite offers. Its just a shame about the calories that annoyingly insist on coming along for the ride! So it’s no surprise that when I found this recipe on indulge without bulge, I needed to make them. Not only are these muffins super tasty and rich in flavor, but you can enjoy them knowing that they aren’t too naughty; flour and white sugar is replaced with greek yoghurt, maple syrup and brown sugar. The only ingredient I swapped was the chocolate chips which I replaced with raisins.
Same taste, better ingredients!



Ingredients – makes 16
1 cup plain greek yoghurt
2 ripe bananas
2 eggs
2 cups rolled oats
2 tbsp brown sugar
2 tbsp maple syrup
1 1/2 tsp baking powder
1/2 tsp baking soda
1 cup sultanas/raisins
Method
Preheat the oven to 200C. prepare your muffin tray by greasing your muffin cases with oil; this is essential, if you don’t use oil on the muffin cases then the batter will stick to the liners once baked.
Place all of the ingredients, apart from the raisins into a food processor and blend well until completely smooth and combined.
Next, add the raisins and stir in by hand. Pop the batter into your muffin cases and put in the oven to bake for 15 minutes.
A very quick, very simple, but very delicious treat you’re going to love.
