Leanin15 Granola

How have I only just discovered Leanin15 recipes?! I must have been hiding under a rock for the last year, inadvertently shielding myself from the Joe Wicks social media hype. Well, at least now I have seen the light. Maintaining a healthy lifestyle is so important to me and so these easy to make, lean and nutritious but oh so delicious delights are making their way into my library of home made meals.
This leanin15 home made granola is not only super simple to make, but it also tastes so delicious and filling, and the best part is that you know exactly what has gone into it…no nasty additives.

I love breakfast time and at the moment I have been having Skyr honey yoghurt, with granola/muesli, mixed with blueberries a few of times a week; so filling and tasty and satisfies my sweet tooth. So when I saw this Leanin15 recipe for home made granola, I knew it was right up my street.
Ingredients
125g mixed nuts – I chose pecan, walnuts & cashew nuts. I used my blitzer to chop them up into small pieces - but not too small, the taste is in the crunch!
1 tsp cinnamon
1 apple, cored and grated (with the skin)
150g rolled oats
20g honey
40g raisins
Method
Pre heat your oven to 180 ºC.
Mix all the ingredients together, bar the raisins in a large mixing bowl then spread over a large baking tray, distributing the granola evenly, in a thin layer.


Bake for 25 mins. During this time, pull out the tray a few times and mix; the granola in the corners of the tray will suffer the most heat and so mixing the granola will avoid burning.
Once baked, sit the tray to cool and then, mixing in the raisins, store in a well-sealed jar, or Tupperware. Enjoy!
